I needed to type this recipe up for my mother-in law, Amy so I thought I would share with the rest of you!

We love fresh green beans from the garden!  My mom enjoys Ina Garten and she shared this recipe with me:

Ina Garten's Fresh Green Beans

1 lb. green beans
kosher salt
2tbsp. butter
1tbsp. olive oil
3 large diced shallots
1/2 tsp. freshly ground black pepper

Put beans in boiling salted water for 3 mins. (until crisp tender)
Drain and immerse in bowl of ice water.

Heat butter and oil in large saute` pan.
Saute` shallots on med. heat 5-10 mins. until lightly browned.

Drain beans from ice water.
Add them to the shallots with 1/2 tsp. salt and pepper.

heat only until beans are hot

So delicious!  If you like your beans more tender rather than crisp you can saute` longer.
Shallots can be hard to find sometimes but it is worth the search-they are so much better than onion in this recipe.
